Cake Baking - Coffee Cake

Heyy every1,

Yesterday I made a delicious Coffee Cake for my mother.
You see, I live in a small but homey village and a group of women meet up and take turns in making a cosy breakfast. So once every year my Mum gets to be the special host!
For the occasion that took place today, she asked me if I could bake something nice and not to sweet, many people around here don't like very sweet things, so I thought a coffee cake might tickle their taste buds!


And it was a success!!

As you can probably see, this creation was a traybake.
A traybake is always simple, all you need to do is pour the cake mixture into a prepared traybake tin which is just a tray really but one you can put in the oven of course ;)
This makes it easier because you don't need to take it out of a form, with the risk that the cake might somehow come out wrong, you just leave it in the tin to cool and when it's ready you can cut the cake into preferable sized squares and pop them onto a plate and your ready to go!

 This lovely recipe is by Lucy Young in the book "Aga Cakes".
 Sadly, we haven't got an aga any more since our big move however
 all the info about the temperature and so on for the use of  a conventional oven
 are thankfully included!
 It was the first time I had made the "Espresso Coffee Traybake" and I must say it
 was delicious!! Even though I made my own white chocolate topping instead of  icing, it was definitely a success, as are many recipes from the recipe book!
 But next time I will follow the recipe just to compare :)

The breakfast was a huge success except for the fact that it had to be cut short, as I was ill and had to be picked up from school :D
